This recipe was another surprise today. I decided to make it for myself and I didn’t expect the kids to be overly interested, but they were. Meester, Squishy and Chorky all scarfed this down. Chorky then took it upon himself to go around the table emptying the dregs of everyone’s dishes.
This makes 3 portions.
- 40g Chia Seeds
- 1 cup of milk (you can use a dairy free milk if you want)
- 3 tablespoons of cocoa powder
- 2 tablespoons of no added sugar smooth peanut butter (I like Whole Earth)
- 1 tsp vanilla extract
- 2 tablespoons of honey.
Combine all the ingredients in a bowl and whisk until smooth. Divide between three glasses, cover and refrigerate for at least three hours. I served with chopped banana and a drizzle of chocolate sauce.
