French Toast Berry Cups

You know those Buzzfeed food videos that you come across on your newsfeed? Yeah this recipe is from one of those. I wanted to try something different. We had pancakes for dinner on Tuesday and I couldn’t face them again but I do like to make an effort with breakfast on a Sunday morning. I baked a loaf of French bread yesterday and used that for the cups so they were probably a bit more rustic and less “cup” like than they could have been, but it held up well. Oh and they were AMAZING.

  • 6 slices of bread (slightly stale works best)
  • 1 egg, beaten
  • 1 cup milk (I used almond)
  • 1 tsp ground cinnamon
  • 1/2 tbsp vanilla extract

 

For the topping:

  • 100g of greek yogurt
  • 1 tbsp maple syrup
  • Strawberries, blueberries and raspberries
  • More maple syrup to drizzle.

 

Preheat an oven to 180oC and spray a muffin tin with cooking spray.

Mix together the egg, milk, cinnamon and vanilla. Dip the bread in the egg mixture and then press into the muffin tin to form a “bowl” shape. Bake for 20 minutes until golden.

Remove from the oven and put on a rack to cool.

While the french toast is cooling, mixture together the greek yogurt and maple syrup and chop the berries.

Fill the cups with the yogurt and sprinkle with berries, drizzle over maple syrup.
